BERRY BURSTS RECIPE

These sweet treats are the gift that keeps on giving - they look difficult to make but are easy. They taste incredibly indulgent but are packed with lots of health benefits.

If you try one recipe is MUST be these. They just have such a WOW factor and really taste + feel like you are treating yourself to the most expensive treat.
INGREDIENTS
280g Frozen Berries
3 tbsp Chia Seeds
4 tbsp runny honey
c 100g Dark Chocolate
1 tbsp Coconut Oil
Step 1: Mash
Defrost your frozen berries (any mixture you like), then mash, until you get the consistency you would like for your filling. Then add the honey and chia seeds. Give it all a good stir and let the chia seeds work their magic for 5-10 mins
Step 2: Freeze
Find a flat based container or tray which will fit into your freezer e.g a small baking sheet. Then line with baking parchment. Dot 50p size dollops of the chia jam on to the sheet. The size of the dots will dictate the size of your discs. Place the tray into the freezer for 30-45mins.
Step 3: Melt
Once the discs are frozen solid, lift them out of the freezer + get on with melting your chocolate. In a bowl place the chocolate chopped into small pieces + the coconut oil. Melt over a bain-marie or in the microwave on the 30 second blasts. You need a runny consistency. But be careful not to burn the chocolate or heat to quickly - slow + steady is the best approach.
Step 4: Coat
Move all the berry discs to one end of the parchment, so you have space to put the soon to be coated ones down. Then armed with 2 forks quickly dip a frozen berry disc into the bowl of chocolate, fish out with the forks letting any excess chocolate drip off, the place back on the parchment.
Step 4: Chill
Pop in the fridge until the chocolate has set + then enjoy your new favourite treat!
