BETTER FOR YOU BLONDIE RECIPE

Chocolatey, peanuty, yummy.

Texture wise you wouldn't be able to tell these have been made using quick oats. But the combination of the oats + the peanut butter provide a great slow energy release. Making these perfect with a cup of tea to ensure you power through the rest of your day.
Serves 8 generously
INGREDIENTS
240g Peanut butter
1 Tsp Vanilla
1 Egg (beaten)
40g Quick Oats / Porridge Oats
1/2 Tbsp Baking Powder
40g Sugar
60g Chocolate of Choice
Milk as required for consistency
Step 1: Prepare
Preheat the oven to 180c + line a shallow baking tray.
Step 2: Mix
Combine all the ingredients, adding milk where necessary to achieve a cookie batter consistency (which can be pressed into the tin). Once happy with the consistency spoon onto the lined tray + dot with extra chocolate chips.
Step 3: Bake
Bake for 20 mins, it needs to look just done as it will firm up more as it cools.
Step 4: Cool
Allow to cool in the tin. Once cool enough to handle use the baking parchment to help lift out the blondie. Either eat warm or leave to cool further + store in an airtight container for a treat during the week.
