NO BAKE CARROT CAKE BALLS RECIPE

All the flavour of carrot cake in a no bake ball.
Carrot Cake Balls


These balls taste fantastic the soft spiced sticky centre coated with the sweet crisp white chocolate is just a taste sensation.

Then the muesli + the carrots make these balls really satisfying - perfect with a cup of tea as a pick me up.



 

INGREDIENTS

  • 125g Almond Butter

  • 80 ml Maple Syrup

  • 170g Muesli

  • 1 Carrot finely grated

  • 1/2 tsp Ground Ginger

  • 1/2 tsp Ground Cinnamon

  • 100g White Chocolate


Step 1: Mix


In a bowl add all the ingredients except the white chocolate + give it an almighty mix until it is all thoroughly combined.


Step 2: Chill


This mixture is sticky, so you may need to chill before rolling. Or if you can roll the mixture into balls placing them on a dish + then chill in the fridge to let them firm up. .


Step 3: Coat


Melt the white chocolate in the microwave 30 second blasts, 600w. Dip the balls into the white chocolate, to coat. Then place on baking parchment to set.


Step 4: Serve


Once the chocolate is set these can be transferred to an airtight container, but I can't see these lasting long!
