HERBY WHIPPED COTTAGE CHEESE RECIPE
You will have never eaten cottage cheese like it!

This is a gem of a recipe, cottage cheese is high in protein, calcium, vitamins A+B, whist relatively low in calories + fat. Then it is whipped to create a lovely creamy consistency. THEN we add lots of fresh herbs + lemon which takes it to a whole new level.
INGREDIENTS
Small bunch basil (c50g)
Small bunch parsley (c50g)
Handful baby spinach (c50g)
1 Punnet cottage cheese
Juice 1 or 2 lemons (up to you)
Salt + Pepper
Step 1: Blitz
Add your cottage cheese to a food processor + blitz until you have a creamy consistency.
Step 2: Wash + Blitz
Thoroughly wash your herbs + place in a food processor with the spinach + lemon juice. Whizz until the greens are blended with the creamy cottage cheese.
Step 3: Store
Pour into an air tight jam jar + store in the fridge. Not that it will be around for long, it can be used as a dip for crackers or crudités, a thick dressing for salads ... the list goes on.
