LEMON MERINGUE BALLS RECIPE

Rich tender lemony balls coated in crushed meringue. Perfect tangy + sweet combo.
Lemon Meringue Balls


Coating the balls in crushed meringue does make these balls special but I would opt for shop bought meringues. If you don't have meringues then these balls can be rolled in chopped nuts of your choice or you could make a simple icing sugar glaze.




 

INGREDIENTS

  • 150g Pitted date

  • 150g Cashew nuts

  • 100g Coconut flour

  • 1 tbsp Lemon zest

  • 5 tbsp Lemon Juice

  • Crushed meringue

Step 1: Blitz


Line a baking sheet. To a food processor add the pitted dates (if the dates don't look "sticky" then soak in a tbsp of boiling water for about 10 mins to "rehydrate" them a little) and blend until small bits remain, scoop out.

Step 2: Mix


To the food processor add the raw nuts, almond flour + coconut flour, blend until a fine meal is achieved. Add back the dates, along with the lemon zest + juice. Blend until a a tacky dough forms.


Step 3: Roll


Scoop out the dough + roll into balls placing the balls on the baking parchment.


Step 4: Coat


Crush the meringues in a shallow dish, so that you can then roll the tacky balls in the meringue to create a coating.


Step 5: Serve


Serve on a pretty plate or store in an airtight container to be enjoyed during the week.
