SAUSAGE + WHITE BEAN CASSEROLE RECIPE
Lost count how many times I have made this dish + loved it every time.

This is an absolute family favourite + a total crowd pleaser. It is really simple to make. Packed with lots of vegetables, different protein sources + heaps of flavour. What more can you ask for from a recipe.
INGREDIENTS
Olive Oil
400g Quality sausages, cut into 3.
2 Carrots
1 Red onion
3 Celery sticks
1 tin Chopped tomatoes
1 tsp Fennel seeds
2 Bay leaves
3 tbsp Italian mixed herbs (or dried mixed herbs of your choice)
1 tin Cannelini Beans
To serve: Couscous + spinach.
Step 1: Sweat
In a large pan spray with oil, then add the sausages and fennel seeds and cook, stirring frequently, until lightly browned. Add the onion, garlic, tomato puree, carrots, celery, bay leaves, and herbs and cook, stirring for 2-3 mins. Then transfer everything to the slow cooker and add the beans and tomatoes.
Step 2: Slow
Cover and cook on a low heat for 4- 6hrs either in a slow cooker or the bottom of a low temperature oven,
Step 3: Serve
A few mins before serving, cook the couscous as per the packet instructions + prepare your green vegetable of choice. Serve and garnish with parsley.
