WHITE CHOCOLATE TIFFIN RECIPE

Pretty as a picture + the perfect creamy, fruity, sweet treat.
White Chocolate Tiffin recipe

What white chocolate lacks in health benefits the goji berries, dried apricots, cashew nuts + banana chips help to counter balance!

It is all about balance!

By adding the coconut oil, the chocolate does not set rock hard, but slightly soft which makes the crunch of the banana chips all the more wonderful.

INGREDIENTS

  • 100g Banana chips (you can get these at health food stores)

  • 75g Dried apricots, roughly chopped

  • 75g Cashew Nuts

  • 25g Goji Berries

  • 200g White Chocolate

  • 1 tbsp Coconut Oil

Step 1: Melt

Break the chocolate into small pieces and put in a heatproof bowl with the coconut oil; set over a pan of barely simmering water and leave to melt. Line a baking tray (about 15cm x23cm) with baking paper.

Step 2: Pour

Reserve c2tbsp of the chopped nuts + dried fruits, then stir the rest into the melted chocolate. Pour the nutty, fruity chocolate onto the prepared tray, sprinkle with the reserved nut + fruit mixture.

Step 3: Chill

Pop into the fridge + chill for at least 3 hours.

Step 4: Serve

Then either chop the set chocolate into squares or break into shards + enjoy! Any leftovers store in an airtight container.
