DATE & CHOCOLATE FUDGE CUPS RECIPE
Sweet sticky dates, packed with antioxidants & gut loving fibre make these a feel good treat.

These chocolate bites are so decadent. The dates combined with the dark chocolate+ almond butter create a dense fudge. You forget they are gluten + refined sugar free!
INGREDIENTS
125g Pitted Dates
150g Dark Chocolate
75g Almond Butter
1tsp Vanilla Extract
Goji Berries for topping
Step 1: Melt
Melt the chocolate either in a bowl over a pan of simmering water or in the microwave at 600w for 30 second blasts
Step 2: Blitz
In a food processor add all the dates, melted dark chocolate (save a couple of tablespoons of the chocolate for the topping), almond butter, vanilla extract. Blend until the ingredients combine into a softball.
Step 3: Fill
Oil a muffin tin (or use a silicon muffins tray), spoon about a tablespoon of sticky mixture into each well.
Step 4: Top
Spoon the reserved chocolate onto each of the date + chocolate discs + top with goji berries for colour.
Step 6: Chill
Place the tray in the fridge to set + then enjoy!
